This burger recipe was given to me by my vegetarian editor at a magazine I once contributed to. He says that if you don't get it quite dry enough, and the burger becomes a bit gloopy, don't worry, as the washing up will be done in seconds! Makes four burgers.

Although it is possible to make these out in a field somewhere, it's a bit messy for a camper. I heartily recommend that you make and freeze the burgers at home, ready to take with you.
In a large pan, over medium heat, add a tablespoon of olive oil and cook the finely diced mushrooms until they release their liquid and begin to dry up a bit. Add the diced onion and cook for a few more minutes.
Allow the mixture to cool slightly, and then add it to all the other ingredients in a large bowl and mix to combine everything well. Depending on the amount of liquid in your mushrooms, you may need to add more flour or breadcrumbs. The mixture should hold its shape, without being dry or crumbly. It should be pretty wet and even a bit sticky.
Pour the remaining breadcrumbs into a baking dish, and, as you form the burgers, dip them into the breadcrumbs to form a crust. This helps them to retain their shape and gives them some structure, but it won't dry them out on the inside.
Finally, and crucially, leave the burgers in the breadcrumbs for half an hour in the fridge, so that a good crust forms, and then freeze them in readiness for a camping expedition.
These are best cooked in a pan with a drop of hot oil for about five to six minutes per side, until the outsides become golden and crispy. Serve them in buns with all the usual trimmings.
